What is Stevia?

Stevia is the shortened name for a plant called Stevia rebaudiana, which is a part of the sunflower family and was originally used for its healing properties. It is native to South America, and is now grown around the world, primarily in Paraguay, China, Kenya, and the United States. The sweetness of the leaves are extracted from the plant and are 200 to 300 times sweeter than sugar. Amazingly, stevia contains zero calories.
 
Following the discovery of its sweetness, stevia became widely used as a healthy, zero-calorie alternative to sugar. It then expanded to be used as a sweetening substance in beverages and foods as well as a substitute in food products. Stevia, found in Stevien, is used as a natural organic sweetener and as a substitute to chemical sweeteners, sugar, fructose and syrups in these products.
 
The Process 
The stevia plant is harvested and certain compounds are extracted. These compounds make up the sweet portion of the plant and are used to create stevia-sweetened foods. Stevien products such as the jams, teas, syrups, and desserts are all naturally flavored with stevia.
